Unless you are going to eat your oysters straight away it is better to buy them unopened. Given the proper care, oysters will live for 5-7 days. You can put live oysters in the fridge but it really needs to be above 4 degrees, the temperature of the water from which they came is perfect.

Keep in an esky and cover with a damp cloth, about 6 degrees is good but up to 12 will be OK, this way they will remain alive and retain their delicious juice.

Once opened oysters will keep for up to 7 days in the fridge but beware, they will absorb any strong flavours, for example rock melon or onion, no matter how well packed

When buying live oysters, make sure they are firmly closed, discard any that are open or appear to have lost their water. Clean the shells before shucking (opening), as this will avoid getting grit in the oyster and having to wash the meat which looses the precious juice.

Tip: If the garbo is not due for a few days after you have eaten your oysters, pop the shells in a bag and keep them in the freezer till mr rubbish man comes.
